Don’t waste your leftover vegetables. For my lunch today I made a delicious meal from half a courgette and a tomato!
I heated some butter in a pan, threw in diced Courgette and Tomato, stirred well then added some garlic, pepper and salt.
I was out of fresh herbs so threw in some dried mint & thyme, as well as a squeeze of 1/2 a lime I had left in the fridge. The vegetables were cooked for around 10 minutes until nice and soft.
Two slices of buttered toast was topped with the mixture, and it was washed down with a nice cuppa tea!
This would also work well in pasta, an omelette or a jacket spud.
